Scrambled chicken with fresh garam masala

Ingredients
  • 1 lbs ground chicken
  • 1 medium onion chopped fine
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp red chili powder
  • 2 thai green chilies (optional)
  • 1 large tomato chopped
  • 2 tbsp oil
  • ¼ cup finely chopped cilantro leaves
Roast and grind the following:
  • 3 green cardamoms
  • 1" stick cinnamon
  • 7-8 whole black pepper
  • 2 cloves
Instructions
  1. Heat oil and fry onions till golden
  2. Add chicken and fry well.
  3. Add salt and red chili powder and fry till the chicken starts turning golden
  4. At this point add ginger and garlic paste.
  5. Now, put in the chopped tomatoes, and fry till the tomatoes are soft and oil starts leaving sides.
  6. Add the freshly ground cardamom, cinnamon, cloves, black pepper powder in the released oil and fry for two more minutes.
  7. Add split thai green chilies (optional) and fresh cilantro.
  8. Serve hot with bread, roti, or use it as a filling for rolls, burritos or sandwich.
For the salad: Cube into tiny pieces and mix with a fork: 1 cup red onion, 1 cup cucumber, 1 cup tomatoes, ½ cup carrots (optional), 1 tbsp finely chopped cilantro, 2-3 Thai green chilies finely chopped (skip if you don't like heat). Mix well, then add 2 tbsp fresh lemon juice, ½ tsp salt and sprinkle freshly cracked black pepper.
