Roasted Carrots

Carrots are vegetables that are not easily consumed in my house. Thinking of ways to incorporate them in our menu has been a challenge of considerable proportion. This is possibly one recipe with which the poor carrots pass the tastebud test it’s put through. Simple and easy, who am I to complain.

Roasted carrots with lemon zest
Ingredients
  • 10-12 carrots
  • Olive oil
  • Salt
  • Pepper
  • 1 lemon for zest
Instructions
  1. Preheat oven to 450 degrees
  2. Trim, peel and slice carrots diagonally ¾th of an inch in width
  3. Toss them in a bowl with salt and pepper
  4. Lay them flat on a baking tray
  5. Drizzle oil (I use olive)
  6. Bake for 25 minutes in upper rack
  7. Use a grater to zest lemon on the carrots before serving.
