AG came back from school happy. My third grader had noticed that he had not received one of the HW assignment sheets at the end of the day, so he went and asked his teacher to give him one. The teacher must have really been pleased because he gave AG a No Homework pass for that sheet. That made my day too!

School is a medley of routine, excitement, boredom and pressure. It’s a never-ending cycle; you don’t ever really come out of the pressure of performance. Never mind it’s not you anymore, but your kids. I don’t remember worrying about my tests and my homework as much as I worry about my kids. In fact, I do remember making truck load of excuses NOT to do homework, even getting away with some!  A few times, a morning of Class Test day would be spent praying to God to make it some kind of a disaster day. We didn’t have snow, but rainy days were notorious, hence very welcome. But I was not really picky – an earthquake would do fine.

Yet today, every time their performance slips, I am off gnawing at straws for reasons. Am I giving them enough attention? Should I be more involved? Am I putting on too much pressure? Maybe I yell too much? The self-doubts are sources of constant pain in you know where. A few days of strict discipline, deprivation of video games and restriction on snacking has brought desired results many a time. But then, it doesn’t take much to slip up, again. My Ma always used to have a favorite line, “When you have kids, you will understand……” Sounds familiar?

 At least, some days are better than others.

AG’s little triumph called for a treat. I decided to bake some pizza for them. I asked them to egg topped cheese pizzapick one ingredient each for the pizza – they had to have toppings, just cheese wouldn’t do. NG picked mushrooms, while AG went for his current favorite ingredient – Quail eggs. My family loves the egg topped pizza, sunny side up. Pizza in general tops popularity chart, and I could bake it every day and have no complaints, but egg pizza makes this otherwise fatty offering a little more nutritious, and chalks up the delish factor too. Plus, it’s Pizza, so gets licked off the plate. A winner from all angles, hands down.

Ingredients:

  • 1 Medium size pizza dough (I used Pillsbury classic pizza crush dough)
  • 2 cups shredded Mozzarella cheese
  • 1 cup mushrooms cubed (I used baby bella)
  • 1 cup onions cubed
  • 1 cup red bell peppers cubed
  • 1 tsp butter
  • salt,freshly ground black pepper and crushed red pepper flakes
  • 6-8 eggs (I used Quail but normal eggs work just as fine)

Directions:

cheese egg pizaPre-heat oven at 400 F

  • Unroll the pizza dough on a pizza stone. Prebake it for 8 minutes.
  • Saute onion, bell peppers and mushroom in butter for a minute. Keep aside.
  • Take the pizza out. Spread cheese, onions, peppers and mushroom.
  • Bake for 5 more minutes.
  • Now take it out again, and break the eggs on the cheese, placing them at uniform distance.
  • Put it back in the oven and bake for five more minutes, till the crust is ready, cheese has melted and the eggs are cooked.
  • Sprinkle salt, pepper and crushed red pepper flakes. Cut into pieces and serve hot.
  • And see it licked right off the plate.
