Aloo-matar station wala - a pea and potato curry, a popular street food

Ingredients
  • 6 medium sized potatoes
  • 1 cup peas (I used frozen)
  • 1 tsp cumin seeds
  • ½ tsp asafetida powder
  • 2 Thai green chilies
  • ½ tsp turmeric powder
  • ½ tsp red chili powder plus 1 tsp
  • 1 tsp coriander powder
  • 2 glasses of water
  • 1 tbsp oil (Olive)
  • Salt
Instructions
  1. Boil the potatoes, just leaving them stiff enough to be cubed.
Note: I wash, peel and microwave them in a bowl of water, 1 minute for each potato. I re-use the water later.
  1. Season cumin seeds in oil
  2. When they crackle, add green chilies and asafetida
  3. Fry the potatoes, turning them around until they are slightly browned. They can stick to the bottom, so make sure you scrape them off while stirring.
  4. Add turmeric, salt and ½ tsp red chili powder.
  5. Put in the frozen peas and turn the flame high till the peas soften and start cooking, then turn the heat to medium.
  6. Add 1 glass of water. Bring to a boil on high. Now put it on simmer for 45 minutes. Keep stirring every 15 minutes, and then add water as it thickens. The curry will be thick and a bit mushy.
  7. Now, add coriander powder, and red chili powder and 1 cup of warm water.
  8. Check for salt, and cook for another five minutes.
  9. Serve with Luchi/puri.
