sautéed potatoes, mushrooms and spinach with 'Panch Phoron'

Ingredients
  • 1 cup mushrooms (any kind) diced
  • 2 cups 1" rectangles of diced potatoes
  • 2 cups fresh spinach leaves, chopped rough
  • 1 level tsp 'panch phoron'
  • 2 Thai green chilies
  • 1 tsp paprika
  • 1 tsp cayenne
  • ½ tsp sugar
  • salt according to taste
  • ½ cup water
  • 2 tbsp olive oil
Instructions
  1. Heat oil and season with panch phoron and 1 Thai green chili
  2. Once the seeds crackle, add potatoes.
  3. Saute for 2 minutes.
  4. Add paprika, cayenne powder and ½ tsp salt.
  5. Now add mushrooms and fry till mushrooms are soft.
  6. Add ½ cup of water, and cook on high till the water evaporates.
  7. Add spinach, and fry till the potatoes are soft, and spinach is glazed.
  8. Break the remaining green chili in to the dish, stir once, check for salt and add more according to taste.
  9. Serve hot with roti, rice or bread.
