sautéed potatoes, mushrooms and spinach with 'Panch Phoron'

- 1 cup mushrooms (any kind) diced
- 2 cups 1" rectangles of diced potatoes
- 2 cups fresh spinach leaves, chopped rough
- 1 level tsp 'panch phoron'
- 2 Thai green chilies
- 1 tsp paprika
- 1 tsp cayenne
- ½ tsp sugar
- salt according to taste
- ½ cup water
- 2 tbsp olive oil
- Heat oil and season with panch phoron and 1 Thai green chili
- Once the seeds crackle, add potatoes.
- Saute for 2 minutes.
- Add paprika, cayenne powder and ½ tsp salt.
- Now add mushrooms and fry till mushrooms are soft.
- Add ½ cup of water, and cook on high till the water evaporates.
- Add spinach, and fry till the potatoes are soft, and spinach is glazed.
- Break the remaining green chili in to the dish, stir once, check for salt and add more according to taste.
- Serve hot with roti, rice or bread.
