Gluten free Crunchy Flax seeds with Chia served with coconut and berries

Recently, I had some reader requests to me to post ideas for healthy gluten free meal ideas. (Thank you so much for writing to me – they mean the world to me 🙂 )

I try to incorporate healthy ideas especially in the breakfast meals. I am normally egg n’ toast breakfast fan, and having any other breakfast can be challenging. My kids love cereals, so getting them away from the sugary stuff can be tough. I came across this box of gluten free crunchy box of cereals and it looked perfect for breakfast that is healthy and gluten free.

Interesting thing was, while the breakfast was filling and I had it a bit late, I was hungry again by the time lunch came. It’s semi sweet, and you can have it just on its own, or with yogurt. I combined it with coconut soaked fat free milk and berries.

You can add your choice of milk – almond, soy or fat free. I am lactose intolerant in pure milk form, so I use Lactaid©. Play around with fruits. I have added mangoes, bananas, peaches too since I made this and I particularly liked the mango version (no pics unfortunately).

This is a quick fix but a delicious breakfast that you can also serve to guests, or simply cap it up and take to work and eat while you are working.

Ingredients
  • 1 cup milk
  • 1 tbsp good quality dry coconut flakes
  • ½ cup mixed berries
  • ½ cup crunchy Flax cereal
  • Agave Nectar to drizzle
Instructions
  1. Soak coconut flakes in 1 cup of milk and refrigerate over night.
  2. Microwave the coconut milk for 1 minute. (You can ski this if you prefer it cold).
  3. Pour the cereal, top with berries.
  4. Drizzle Agave nectar on top and serve.
