Fish tacos with mini pitas

Summer and vacations go hand in hand. Throw into the pit the eternal search for quick, filling, healthy meals and you realize that you are a lot more creative, though not very original, than you realized.

 

These fish tacos make about 20 minutes to put together, less if you have all the ingredients handy. I was already cooking doi maach for dinner, and saved a few fillets of fish for lunch. Threw some guacamole sauce and light olive oil mayo and it becomes a run away hit.

Ingredients
  • 4 mini pitas
  • 2 fish fillet fried/baked (any white fish; I cooked Baramundi)
  • Guacomole sauce
  • Siracha
  • Chopped onions
  • Lime juice
  • A few sprigs of cilantro
Instructions
  1. Arrange pita on a plate
  2. Top it with 1 tsp of mayo
  3. tsp of guacamole salsa
  4. Crumble the fish piece on top
  5. Garnish with chopped onions
  6. Squeeze some siracha on top
  7. Finish with a few sprigs of cilantro and lime juice
  8. Serve
